Ingredients

Scale

Main Ingredients

  • 8 oz skinless, boneless fresh salmon fillet, cut into 1 to 1.5-inch cubes
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon zest (from about half a lemon)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Ingredients

  • 1 tablespoon fresh chopped dill or parsley (for garnish)
  • Extras for coating: 1 tablespoon grated parmesan cheese or finely chopped nuts (optional)
  • Spices for variation: pinch of cayenne pepper or smoked paprika (optional)

Instructions

  1. Prepare and Cut the Salmon: Start with skinless, boneless salmon fillet and cut it into bite-sized cubes, roughly 1 to 1.5 inches each for even cooking.
  2. Season and Coat: In a bowl, mix olive oil, garlic powder, lemon zest, salt, and pepper. Gently toss the salmon cubes in this mixture, then evenly coat them with panko breadcrumbs to achieve a crispy texture.
  3. Arrange in Air Fryer Basket: Place the coated salmon bites in a single layer inside the air fryer basket, ensuring pieces do not touch to allow proper air circulation for even crisping.
  4. Air Fry to Perfection: Set the air fryer temperature to 400°F (200°C) and cook for 8-10 minutes. Shake the basket halfway through cooking to brown all sides evenly.
  5. Check and Serve: Once the bites are golden brown and cooked through (internal temperature reaching 145°F/63°C), carefully remove them and serve immediately with your favorite dipping sauce or garnish.

Notes

  • Use fresh salmon for the best flavor and texture.
  • Do not overcrowd the air fryer basket to ensure crispy bites.
  • Shake or flip the salmon bites halfway through cooking for even browning.
  • Mix parmesan cheese or finely chopped nuts with panko breadcrumbs for extra crunch and flavor.
  • Use only enough olive oil to help crisp the coating without making it soggy.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Freeze uncooked salmon bites on a baking sheet, then transfer to a freezer bag; cook from frozen, adding a few extra minutes to air frying time.
  • Reheat in the air fryer at 350°F (175°C) for 3-4 minutes to restore crispiness.
