Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 6 tbsp unsalted butter, melted

Apple Filling

  • 3 cups peeled and sliced apples (Granny Smith or Honeycrisp recommended)
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Cheesecake Batter

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup sour cream or heavy cream

Crumble Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 cup old-fashioned oats
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Prepare the Crust: Crush graham crackers into fine crumbs and mix with melted butter and brown sugar. Press this mixture evenly into the bottom of a springform pan to form a sturdy base.
  2. Make the Apple Filling: Peel and slice the apples, then cook briefly with cinnamon, nutmeg, and brown sugar until they are tender but still hold their shape, creating a warm spiced flavor.
  3. Mix the Cheesecake Batter: Beat the cream cheese and granulated sugar together until smooth and fluffy. Add the eggs one at a time, followed by the sour cream or heavy cream, to create a luscious, creamy batter.
  4. Assemble the Layers: Pour half of the cheesecake batter over the crust, spread the spiced apple filling evenly on top, then cover it with the remaining cheesecake batter to seal the filling inside.
  5. Prepare the Crumble Topping: Combine flour, brown sugar, oats, and cold cubed butter; mix until crumbly. Sprinkle this topping generously over the cheesecake.
  6. Bake and Cool: Bake at 325°F (163°C) for about 50-60 minutes until the cheesecake is set but slightly jiggly in the center. Allow it to cool completely, then refrigerate for several hours or overnight to develop full flavor.

Notes

  • Use room temperature cream cheese and eggs for a smooth, lump-free batter.
  • Do not overmix the batter to avoid air bubbles that can cause cracks.
  • Bake the cheesecake in a water bath for even heat and a crack-free finish.
  • Let the cheesecake cool gradually to prevent cracking and improve texture.
  • Use fresh, crisp apples for the best flavor and texture contrast.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
  • Reheat individual slices briefly in the microwave to soften the crumble topping.
