This bite-sized treat is quick to prepare, perfect for entertaining, and offers a sophisticated sweet and savory flavor combination that will impress guests and satisfy cravings.

Ingredients

Scale

Main Ingredients

  • 12 large Medjool dates, pitted
  • 4 oz goat cheese, softened
  • 6 slices bacon, cut in half
  • Toothpicks, as needed

Optional Extras

  • 12 whole almonds or pecans (optional, for stuffing)
  • Honey or balsamic reduction for drizzling (optional)
  • Chopped fresh herbs like rosemary or thyme (optional, mixed into goat cheese)
  • Cayenne pepper or chili flakes (optional, for a spicy kick)

Instructions

  1. Prepare the Dates: Slice each Medjool date lengthwise on one side to create a pocket, then carefully remove the pit without tearing the date to preserve its shape for stuffing.
  2. Stuff the Dates: Using a small spoon or piping bag, fill each pitted date generously with goat cheese. Optionally, add a whole almond or pecan inside with the cheese for extra crunch.
  3. Wrap with Bacon: Cut the bacon slices in half. Wrap each stuffed date with a half slice of bacon, ensuring it fully covers the date and holds the filling inside. Secure with a toothpick.
  4. Cook Until Crispy: Place the wrapped dates on a parchment-lined baking sheet. Bake in a preheated oven at 400°F (200°C) for 15 to 20 minutes or until the bacon is golden and crispy. Alternatively, pan-fry over medium heat until bacon is cooked evenly and crisp.
  5. Serve Warm: Let the bacon-wrapped dates cool slightly before serving to allow the cheese to set and to avoid burns from hot filling. Optionally, drizzle with honey or balsamic reduction and garnish with fresh herbs before serving.

Notes

  • Use large, soft Medjool dates for easier stuffing and richer flavor.
  • Secure bacon firmly with toothpicks to prevent unraveling during cooking.
  • Pat bacon dry with paper towels if very fatty to reduce excess grease.
  • Don’t over-stuff with goat cheese to avoid spillage during cooking.
  • Check bacon frequently after 15 minutes to prevent burning.
