Ingredients

Scale

Main Ingredients

  • 4 fresh cod fillets (about 6 oz each), firm and flaky
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons fresh herbs (parsley, dill, or thyme), chopped
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 teaspoon chili flakes

Optional Variations

  • 1/4 cup olives, pitted (for Mediterranean style)
  • 1/4 cup cherry tomatoes, halved (for Mediterranean style)
  • 1 tablespoon capers (for Mediterranean style)
  • 1/2 cup breadcrumbs mixed with 2 tablespoons fresh herbs and 1/4 cup grated Parmesan (for herb crust)
  • 2 tablespoons unsalted butter mixed with 1 tablespoon fresh lemon juice (for lemon butter glaze)
  • 1/2 teaspoon smoked paprika and 1/4 teaspoon cayenne pepper (for spicy baked cod)
  • 2 tablespoons coconut oil and 2 tablespoons fresh lime juice (for dairy-free flavor boost)

Instructions

  1. Prepare the Cod Fillets: Pat the cod fillets dry with paper towels to remove any excess moisture. This helps the seasoning stick better and ensures even baking without steaming.
  2. Season the Fish: Drizzle olive oil over each fillet. Sprinkle salt, black pepper, minced garlic, and your choice of fresh herbs evenly on the fish. Finish by squeezing fresh lemon juice over the top to brighten the flavors.
  3. Arrange for Baking: Place the seasoned cod fillets on a baking sheet lined with parchment paper or a lightly greased baking dish. Make sure to leave space between each fillet for even cooking.
  4. Bake the Cod: Preheat the oven to 400°F (200°C). Bake the cod for 12-15 minutes, or until the fish is opaque throughout and flakes easily when tested with a fork.
  5. Serve and Enjoy: Let the baked cod rest for a couple of minutes after removing from the oven. Garnish with extra fresh herbs and lemon slices before serving.

Notes

  • Use thick, fresh cod fillets for the best texture and flavor.
  • Do not overcook; remove from the oven as soon as the cod flakes easily with a fork.
  • Allow the fish to rest briefly after baking to redistribute juices and maintain moistness.
  • For accuracy, cook cod to an internal temperature of 145°F (63°C).
  • Enhance seasoning with fresh citrus zest and herb combinations to brighten the dish.
