Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) so it’s hot and ready to give the potatoes a beautiful crispy exterior while allowing the feta to bake perfectly.
  2. Prepare the Potatoes: Wash and halve your small potatoes, then toss them in a bowl with olive oil, minced garlic, salt, and pepper. Ensure each piece is well coated for even roasting.
  3. Arrange in Baking Dish: Place the potatoes in a single layer in a baking dish. Nestle chunks or crumbled feta cheese among the potatoes so the cheese can melt and infuse the potatoes during baking.
  4. Add Fresh Herbs and Lemon: Sprinkle fresh rosemary or thyme on top. If using lemon zest or juice, add it now to brighten the flavors just before baking.
  5. Bake Until Golden and Crisp: Bake for 30 to 40 minutes until potatoes are tender inside and golden outside, and the feta is slightly melted and creamy. Check halfway through to gently toss the potatoes for even cooking.
