Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80-85% lean)
  • 68 bacon strips
  • 1 cup bourbon BBQ sauce (store-bought or homemade)
  • 46 slices cheddar or American cheese
  • 4 sturdy sub rolls

Flavoring Ingredients

  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

Instructions

  1. Prepare the Meatballs: In a large bowl, combine the ground beef with finely chopped onion, minced garlic, salt, pepper, and smoked paprika. Mix gently to combine without compacting the meat. Shape into evenly sized meatballs about the size of a golf ball.
  2. Cook the Bacon: Fry the bacon strips in a skillet over medium heat until crispy. Drain on paper towels, then chop into bite-sized pieces for mixing into the meatballs or sprinkling on top later.
  3. Brown the Meatballs: Using the same skillet, brown the meatballs over medium heat, turning occasionally until they develop a nice crust but are not fully cooked through.
  4. Simmer in Bourbon BBQ Sauce: Transfer the browned meatballs to a saucepan. Pour the bourbon BBQ sauce over them, cover, and simmer on low heat for 15 to 20 minutes until fully cooked and flavorful.
  5. Toast the Sub Rolls and Add Cheese: Split the sub rolls and toast lightly under a broiler or toaster oven. Place the meatballs inside each roll, spoon extra sauce on top, then layer with cheddar or American cheese. Return to the oven briefly to melt the cheese perfectly.
  6. Assemble and Serve: Sprinkle the chopped crispy bacon on top of the melted cheese, close the subs, and serve immediately for a juicy, flavor-packed bite.

Notes

  • Don’t overmix the ground beef to keep meatballs tender.
  • Use a rich bourbon BBQ sauce for the best smoky flavor; homemade sauce is ideal.
  • Lightly toast the sub rolls to prevent sogginess and add crunch.
  • Keep the BBQ sauce warm when serving to maintain juiciness.
  • Add the crispy bacon last to retain its texture and smoky taste.
