Filling Ingredients

- Prepare the Peanut Butter Filling: In a large bowl, combine creamy peanut butter, softened butter, vanilla extract, and powdered sugar. Use a sturdy spoon or electric mixer to blend everything until smooth and thick. The mixture should hold together well but still be soft enough to roll.
- Shape the Buckeyes: Using your hands, roll the peanut butter mixture into small, even-sized balls about 1 inch in diameter. Place the balls onto a parchment-lined baking sheet and chill them in the refrigerator for at least 30 minutes to firm up.
- Melt the Chocolate: In a microwave-safe bowl or using a double boiler, gently melt the chocolate chips with a small amount of vegetable shortening or coconut oil, stirring frequently until smooth and glossy.
- Dip Each Ball: Remove the peanut butter balls from the fridge. Using a toothpick or fork, dip each one into the melted chocolate, leaving a small portion of peanut butter exposed at the top to resemble a Buckeye nut. Let excess chocolate drip off, then place them back on the parchment paper.
