Filling Ingredients

  • 1 cup buttermilk
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour

Pie Crust

  • 1 9-inch pie crust, homemade or store-bought

Instructions

  1. Prepare the Pie Crust: Roll out your pie crust to fit a 9-inch pie dish. Press the crust evenly into the dish, trim any excess dough, and crimp the edges for a decorative finish. Chill the crust while you prepare the filling to ensure it stays flaky during baking.
  2. Mix the Filling: In a large bowl, whisk together the granulated sugar, all-purpose flour, and eggs until smooth. Gradually add melted butter, then slowly pour in the buttermilk, stirring to combine. Finally, add vanilla extract for flavor depth. The mixture should be silky and pourable.
  3. Pour and Bake: Carefully pour the filling into the chilled pie crust. Place the pie on the center rack of a preheated oven at 350°F (175°C). Bake for 50 to 60 minutes, until the custard is set around the edges but still slightly jiggly in the center.
  4. Cool Completely: Remove the pie from the oven and allow it to cool on a wire rack for at least two hours. This resting time lets the filling fully set and the flavors meld beautifully.

Notes

  • Use room temperature ingredients for a smooth custard.
  • Don’t overbake to avoid cracks and dryness; aim for a slight jiggle in the center.
  • Chill the crust before baking to prevent shrinking and promote flakiness.
  • Test doneness by inserting a toothpick near the edge; it should come out mostly clean with a few moist crumbs.
  • Allow the pie to rest and cool fully to enhance texture and flavor.
