Scale

Main Ingredients

  • 2 cups roasted and pureed butternut squash
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups milk (whole or 2%)
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Roast the Butternut Squash: Peel, cube, and roast the butternut squash at 400°F (200°C) for 25–30 minutes until tender and caramelized to bring out its natural sweetness and ease pureeing.
  2. Cook the Macaroni: Boil elbow macaroni in salted water until just al dente, then drain and set aside to keep the pasta ready for combining.
  3. Prepare the Cheese Sauce: In a saucepan, melt butter over medium heat, then whisk in milk, garlic powder, onion powder, salt, and pepper. Slowly add shredded cheddar cheese, stirring until smooth and creamy.
  4. Blend the Squash: Puree the roasted butternut squash in a blender or food processor until silky smooth, adding a little water or milk if needed to reach desired consistency.
  5. Combine and Heat Through: Mix the pureed squash into the cheese sauce, then fold in the cooked macaroni. Warm everything together over low heat, stirring gently to evenly coat the pasta.

Notes

  • Roasting the squash deepens its sweetness and adds flavor complexity.
  • Use sharp cheddar for a bold balance to the natural sweetness of the squash.
  • Keep the pasta slightly undercooked to avoid sogginess when combined with the sauce.
  • Ensure the squash puree is completely smooth for the creamiest sauce.
  • Adjust sauce thickness by thinning with milk or simmering gently to thicken.
  • Optional toppings: fresh parsley or chives, toasted breadcrumbs, or chopped pecans for added texture and flavor.
