Ingredients

Scale

Main Ingredients

  • 6 cups rustic bread cubes (day-old, such as sourdough, French baguette, or Italian bread)
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh sage
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh thyme
  • 1 to 1 1/2 cups warm chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional Variations

  • Gluten-free bread (to replace rustic bread cubes for gluten-free version)
  • 1 cup cooked breakfast sausage (for meatier stuffing)
  • 1/2 cup toasted pecans or dried cranberries (for extra crunch and sweetness)
  • Vegan butter and vegetable broth (for a vegan version)
  • Pinch of crushed red pepper flakes or diced jalapeños (for spicy kick)

Instructions

  1. Prepare the Bread: Cut the rustic bread into evenly sized cubes and allow them to dry out overnight or toast lightly so they absorb moisture without becoming mushy.
  2. Sauté the Aromatics: Melt the butter in a large skillet over medium heat. Add the diced onions and celery and cook for 5–7 minutes until softened and fragrant.
  3. Combine Ingredients: In a large bowl, gently toss the toasted bread cubes with the sautéed onions and celery, fresh herbs (parsley, sage, rosemary, thyme), salt, and pepper.
  4. Add Broth: Gradually pour warm chicken or vegetable broth over the mixture, stirring carefully until the bread is moistened but not soaked.
  5. Bake to Perfection: Transfer the stuffing to a buttered baking dish. Dot the top with a little extra butter. Bake at 350°F (175°C) for 30–40 minutes, or until the top is golden and crisp.

Notes

  • Use day-old bread or lightly toasted bread cubes to prevent sogginess.
  • Don’t skimp on butter; it adds richness and beautiful texture.
  • Fresh herbs provide brighter flavor and aroma than dried.
  • Add broth gradually to control moisture perfectly.
  • Let stuffing rest a few minutes after baking to meld flavors and firm texture.
