Instructions

  1. Prep the Chicken and Veggies: Season the chicken breasts or thighs with salt, pepper, and paprika. Lightly sear the chicken in a hot skillet until golden on the outside but not fully cooked through. Remove from heat and let it rest. Meanwhile, in the same skillet, sauté diced onions and minced garlic until softened and fragrant.
  2. Combine Rice and Base Ingredients: In a baking dish, mix together the uncooked long-grain white rice, chicken broth, sour cream or cream cheese, sautéed onions and garlic, and any optional vegetables you choose to include. Stir gently to combine into a creamy base.
  3. Add Chicken and Cheese: Place the seared chicken pieces on top of the rice mixture evenly. Sprinkle a generous amount of shredded cheddar and mozzarella cheese over the entire dish, reserving some for the final topping.
  4. Bake Until Perfect: Cover the baking dish tightly with foil to trap steam. Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the rice is tender and the chicken is fully cooked to an internal temperature of 165°F (74°C). Remove the foil and sprinkle the remaining cheese on top. Return to oven and bake uncovered for an additional 5-10 minutes until the cheese is bubbly and golden.
