Instructions

  1. Prepare the Chicken: Cook and shred your chicken breasts or thighs until tender. You can use baked, boiled, or rotisserie chicken for convenience and texture.
  2. Cook the Lasagna Noodles: Boil the noodles until al dente following package instructions. Drain and lay them flat to prevent sticking.
  3. Make the Alfredo Sauce: In a saucepan, melt butter and sauté garlic until fragrant. Whisk in heavy cream and 1 cup grated Parmesan cheese, stirring continuously until the sauce is smooth and thickened.
  4. Mix the Cheese Filling: Combine ricotta, ½ cup mozzarella, the remaining ½ cup Parmesan, and chopped parsley in a bowl to create a creamy filling perfect for layering.
  5. Assemble the Layers: Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Layer noodles, ricotta cheese mixture, shredded chicken, optional vegetables, more Alfredo sauce, and a sprinkle of mozzarella. Repeat layers until all ingredients are used, finishing with a generous layer of mozzarella on top.
