Ingredients

Scale

Proteins

  • 1 lb boneless, skinless chicken breast or thighs, sliced into thin bite-sized strips

Vegetables

  • 1 cup red bell pepper, chopped
  • 1 cup yellow bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauces & Oils

  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons vegetable oil or sesame oil
  • Optional: 1/4 teaspoon chili flakes

Instructions

  1. Prepare the Ingredients: Slice the chicken into thin, bite-sized strips to ensure quick and even cooking. Chop the bell peppers into similar-sized pieces, and mince the garlic and ginger to release their fragrant flavors.
  2. Heat the Pan and Cook Chicken: Heat your vegetable or sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces, cooking until they turn golden brown and are cooked through, about 5 to 7 minutes. Remove the chicken and set aside.
  3. Stir-Fry the Vegetables: In the same pan, add a little more oil if needed and toss in the garlic and ginger, stirring for about 30 seconds until aromatic. Then add the bell peppers, cooking just until they start to soften but still retain their crunch, about 3 to 4 minutes.
  4. Combine and Sauce: Return the chicken to the pan with the peppers. Pour in the soy sauce and optional chili flakes, tossing everything together so the sauce coats every bite. Cook for another 1 to 2 minutes to blend the flavors.
  5. Finish with Green Onions: Turn off the heat and sprinkle chopped green onions on top for a fresh burst of flavor and crunch. Serve immediately for the best taste and texture.

Notes

  • Prep all ingredients before cooking to keep the stir-fry process smooth and fast.
  • Use high heat to get a perfect sear and keep vegetables crisp.
  • Do not overcrowd the pan; cook in batches if necessary to avoid steaming.
  • Taste the sauce before adding and adjust sweetness, saltiness, or spice as preferred.
  • Let the cooked chicken rest briefly if needed to retain juiciness when combined with veggies.
