Ingredients

Scale

Chicken

  • 1 whole chicken or 3-4 chicken pieces (bone-in recommended)

Vegetables

  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and chopped
  • 1 zucchini, sliced
  • 1 ear of corn, cut into chunks

Aromatics

  • 1 onion, chopped
  • 3 cloves garlic, minced

Herbs and Spices

  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Liquids

  • 8 cups water or chicken broth

Instructions

  1. Prepare the Chicken: Clean the chicken pieces thoroughly, removing any excess fat or skin as preferred to keep the broth clear and the taste rich but not greasy.
  2. Sauté Aromatics: In a large pot, lightly sauté the chopped onions and minced garlic until fragrant and slightly golden to create a flavorful base for the broth.
  3. Add Chicken and Water: Add the chicken pieces into the pot and pour in enough water or broth to cover. Bring to a gentle boil, then reduce heat to a steady simmer.
  4. Simmer with Herbs and Vegetables: Add bay leaves, salt, and pepper to season the broth. After about 30 minutes of simmering, add the sturdy vegetables like carrots and potatoes and cook until tender.
  5. Add Softer Vegetables and Finish: In the final 10 minutes, add softer veggies such as zucchini and corn to prevent overcooking. Adjust seasoning as needed and stir in fresh cilantro for color and freshness before serving.

Notes

  • Use bone-in chicken for a richer broth.
  • Skim foam and fat occasionally for a clear soup.
  • Simmer gently to keep chicken tender and broth clear.
  • Add vegetables in stages to avoid mushiness.
  • Let soup rest for a few minutes before serving to meld flavors.
