Instructions

  2. Sauté Aromatics: In a large pan or wok, heat cooking oil over medium heat. Add finely chopped garlic and onion, sautéing until fragrant and translucent to build a savory base flavor.
  3. Cook Chicken: Add sliced chicken to the pan, stirring frequently until pieces turn white and begin to brown slightly, sealing in juices and developing flavor.
  4. Add Vegetables and Broth: Introduce julienned carrots and green beans, stir for 2 minutes before pouring in chicken broth. Let simmer for 3 to 5 minutes until vegetables soften but remain crisp.
  5. Cook the Noodles: Soak pancit noodles in warm water for 5 minutes to soften, then drain. Add noodles to pan and mix gently, coating evenly with broth and soy sauce. Continue cooking until noodles are tender but not mushy.
  6. Final Seasoning and Serving: Sprinkle calamansi or lemon juice for brightness, adjust soy sauce to taste. Toss everything together once more, garnish with sliced green onions and fried garlic if desired. Serve hot.
