Filling
- 1 lb ground chicken
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup cabbage or Napa cabbage, shredded
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
Assembly and Cooking
- Potsticker wrappers (about 30 wrappers)
- 1 tablespoon vegetable oil (for frying)
- 1/4 cup water (for steaming)
- Prepare the Filling: In a large bowl, combine the ground chicken, finely chopped green onions, minced garlic, grated ginger, shredded cabbage, soy sauce, and toasted sesame oil. Mix thoroughly until all ingredients are well incorporated.
- Fill the Wrappers: Place one potsticker wrapper on a clean surface. Add about one teaspoon of the chicken filling in the center. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper in half and press firmly to seal, pleating the sides if desired to secure the filling properly.
- Cook the Potstickers: Heat 1 tablespoon of vegetable oil in a nonstick skillet over medium-high heat. Arrange the potstickers in a single layer and sear until the bottoms turn golden brown, about 2 to 3 minutes. Carefully add 1/4 cup water to the pan, cover with a lid, and steam for 5 to 6 minutes until the filling is cooked through and wrappers become tender.
- Serve Hot: Remove the lid and cook uncovered for another minute to crisp the bottoms again. Transfer the potstickers to a plate and serve immediately with your favorite dipping sauce.
Notes
- Don’t overfill the wrappers to prevent them from bursting during cooking.
- Moisten and press edges tightly to seal well and avoid filling leaks.
- Use medium-high heat to achieve a crispy crust while steaming the inside evenly.
- Allow potstickers to cool slightly before cooking in batches to prevent sticking.
- Try different dipping sauces like soy sauce, chili oil, or vinegar with garlic to add variety.
