Instructions

  1. Cook the Pasta: Boil the spaghetti according to package instructions until al dente. Drain and set aside, saving some pasta water if you want a looser sauce later.
  2. Prepare the Chicken: Shred cooked chicken into bite-sized pieces. Rotisserie chicken or poached chicken breasts work well.
  3. Sauté the Vegetables: In a large skillet, heat oil over medium heat. Add diced onions and bell peppers and sauté until softened, about 5 minutes, to enhance sweetness and flavor.
  4. Make the Sauce: Add cream cheese, cheddar cheese, and cream of mushroom or chicken soup to the sautéed vegetables. Stir gently until the mixture forms a smooth and creamy sauce.
  5. Combine Chicken and Pasta: Add the shredded chicken and cooked spaghetti noodles to the sauce. Mix thoroughly to coat everything evenly and heat through. Add reserved pasta water if the sauce is too thick.
