Instructions

  1. Prepare the Mushrooms: Gently clean mushrooms with a damp paper towel to remove dirt. Carefully remove the stems, keeping the caps intact to hold the filling.
  2. Make the Filling: Finely chop the mushroom stems. Sauté them with minced garlic and onion in olive oil until softened. In a bowl, combine this mixture with shredded cooked chicken, softened cream cheese, chopped fresh herbs, salt, and pepper. Mix until creamy and well blended.
  3. Stuff the Mushroom Caps: Spoon the chicken mixture generously into each mushroom cap. Press gently to pack the filling without breaking the caps. Sprinkle grated Parmesan cheese over the tops for a golden crust.
  4. Bake Until Golden: Arrange the stuffed mushrooms on a baking sheet. Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until the tops are golden and mushrooms are tender but not soggy.
  5. Garnish and Serve: Let the mushrooms cool for a few minutes after baking. Garnish with additional fresh herbs. Serve warm to enjoy the creamy, gooey deliciousness.
