Instructions

  1. Prepare Your Ingredients: Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes to ensure even cooking. Mince the garlic cloves and thinly slice the onion. Pat dry the chicken and season it generously with salt, pepper, and the dried herbs.
  2. Combine in a Baking Dish: In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, sliced onions, salt, and pepper. Add the seasoned chicken pieces and coat them lightly in the mixture. Transfer everything into a greased baking dish, spreading out evenly for uniform cooking.
  3. Add Broth and Bake: Pour the chicken broth around the edges of the baking dish to keep the casserole moist without sogginess. Place the dish in the oven and bake for 35 to 40 minutes, until the sweet potatoes are tender and the chicken reaches an internal temperature of 165°F (75°C).
  4. Check and Finish: Halfway through baking, gently stir the mixture to promote even roasting and prevent sticking. If desired, sprinkle shredded mozzarella or cheddar cheese on top and return to the oven for the last 5 minutes until the cheese is bubbly and golden brown.
