Chicken Yakisoba

Chicken Yakisoba is a quick, savory Japanese stir-fried noodle dish combining tender chicken, crisp cabbage, carrots, and green onions tossed in a flavorful sauce of soy, oyster, and Worcestershire sauces. Ready in under 30 minutes, it offers a comforting, balanced meal perfect for busy weeknights with versatile ingredients suitable for the whole family.

Ingredients

Scale

Protein

  • 1 lb chicken thighs or breasts, cut into bite-sized pieces

Noodles

  • 12 oz yakisoba noodles

Vegetables

  • 2 cups cabbage, thinly sliced
  • 1 cup carrots, thinly sliced
  • 3 green onions, sliced into small rounds
  • 2 cloves garlic, minced

Sauces & Oils

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp vegetable oil

Optional Garnishes

  • 1 tsp sesame seeds, toasted

Instructions

  1. Prepare the Ingredients: Chop the chicken into bite-sized pieces, thinly slice the cabbage and carrots, and cut green onions into small rounds. Mince the garlic. This prep ensures even and quick cooking.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the cooked chicken and set aside.
  3. Stir-Fry the Vegetables: In the same pan, add remaining oil if needed and toss in the minced garlic, sliced cabbage, and carrots. Stir-fry until the vegetables are slightly softened but still retain crunch, about 3-4 minutes.
  4. Add the Noodles and Sauce: Add the yakisoba noodles and cooked chicken back into the pan. Pour in the soy sauce, oyster sauce, and Worcestershire sauce. Toss everything together continuously until the noodles are heated through and evenly coated with the glossy sauce, approximately 2-3 minutes.
  5. Garnish and Serve: Stir in the sliced green onions and sprinkle with toasted sesame seeds if using. Serve immediately while hot and fragrant.

Notes

  • Use day-old yakisoba noodles if possible for better texture and less stickiness.
  • Do not overcrowd the pan; stir-fry in batches if necessary to ensure even cooking.
  • Adjust soy and Worcestershire sauce quantities to suit preferred saltiness and tanginess.
  • Add sauces gradually to avoid making the dish too wet or overpowering the flavors.
  • Cook on high heat to achieve authentic slightly charred, smoky flavor.
