  • 1 can (15 oz) chickpeas, rinsed and drained

  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup feta cheese, crumbled (use vegan feta for vegan option)
  • 2 tbsp fresh parsley, roughly chopped
  • 1 tbsp fresh oregano, roughly chopped

  • 3 tbsp extra-virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare your ingredients: Rinse and drain canned chickpeas well. Chop the cucumber, halve the cherry tomatoes, finely slice the red onion, and roughly chop the fresh parsley and oregano. Pit and halve the Kalamata olives if needed.
  2. Combine the vegetables and chickpeas: In a large bowl, gently toss the chickpeas with cucumbers, tomatoes, onions, olives, and herbs to mix all the colorful components evenly.
