Chocolate Mousse Cake Ingredients

  • 100g high-quality dark chocolate (70% cocoa or higher)
  • 1 cup heavy cream (chilled)
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup all-purpose flour (or gluten-free flour blend as a substitute)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the cake base: Begin by mixing softened butter, sugar, egg yolks, and vanilla extract until creamy and smooth. Gradually fold in sifted flour to create a smooth batter. Pour the batter into a greased baking pan and bake at 350°F (175°C) for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before layering.
  2. Melt the chocolate: Gently melt the dark chocolate over a double boiler or in short bursts in the microwave, stirring frequently to prevent burning. Set aside and let it cool slightly while remaining liquid.
  3. Whip the cream: In a chilled bowl, whip the heavy cream to soft peaks, taking care not to over-beat. This will provide the mousse with its light and fluffy texture.
  4. Beat egg whites and sugar: Whip the egg whites until foamy, then gradually add sugar while continuing to beat until stiff peaks form. This step adds volume and stability to the mousse.
  5. Combine all elements: Fold the melted chocolate carefully into the whipped cream. Then, gently fold in the egg whites using a spatula, preserving the airy texture of the mousse.
  6. Assemble the cake: Place the cooled cake base in your serving dish or mold. Pour the mousse mixture evenly over the cake and smooth the top. Refrigerate for at least 4 hours or until fully set before serving.

Notes

  • Use room temperature eggs for better whipping and volume in the mousse.
  • Be patient with refrigeration to allow the mousse to firm up properly for optimal texture.
  • Fold ingredients gently to retain the mousse’s airy structure.
  • Choose high-quality dark chocolate to enhance flavor and smoothness.
  • Chill your mixing bowls before whipping cream for faster, more stable peaks.
