Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • 1 cup whole milk, warmed
  • 6 tablespoons unsalted butter, melted
  • 2 large eggs, room temperature

Apple Pie Filling

  • 3 cups fresh apples, peeled and finely chopped (preferably Granny Smith or Honeycrisp)
  • 3 tablespoons unsalted butter
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Glaze (Optional)

  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 12 tablespoons milk or vanilla extract

Instructions

  1. Prepare the Dough: Warm the milk slightly and melt the butter. Mix the warm milk, melted butter, yeast, and granulated sugar in a bowl to activate the yeast. Once foamy, add the eggs and gradually incorporate the flour. Knead the mixture until the dough becomes soft, smooth, and elastic. Cover and let it rise in a warm place until it doubles in size, about 1 to 1.5 hours.
  2. Make the Apple Pie Filling: Peel and finely chop the apples. In a skillet, sauté the apples with butter, brown sugar, cinnamon, nutmeg, and lemon juice over medium heat. Cook gently until the apples are tender but still retain some texture, about 8-10 minutes. Allow the filling to cool slightly before assembling.
  3. Assemble the Rolls: Roll out the risen dough into a large rectangle. Spread softened butter evenly over the surface, then sprinkle a mixture of cinnamon and sugar generously. Spread the cooled apple pie filling evenly on top. Starting from one edge, roll the dough tightly into a log. Slice the log into equal pieces (about 12 rolls).
  4. Second Rise: Place the rolls in a greased baking dish, spacing them slightly apart. Cover with a clean towel or plastic wrap and allow them to rise again for 30-45 minutes until puffy and nearly doubled.
  5. Bake to Golden Perfection: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until they are golden brown and cooked through. Remove from oven and let cool slightly before glazing.
  6. Add the Glaze (Optional): Beat together softened cream cheese, powdered sugar, and milk or vanilla extract until smooth and creamy. Drizzle the glaze generously over the warm rolls before serving.

Notes

  • Knead the dough until smooth and elastic for soft, tender rolls.
  • Do not overcook apples; keep filling chunky to avoid a mushy texture.
  • Use room temperature ingredients (milk, eggs, butter) to help activate the yeast properly.
  • Slice the rolls evenly using dental floss or a sharp knife to keep shapes intact.
  • Cover dough during rises to prevent drying out.
