Ingredients

Scale

Protein

  • 4 bone-in chicken thighs or breasts

Vegetables

  • 4 medium Yukon gold or white potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced into rounds
  • 1 cup corn kernels (fresh or frozen)

Herbs and Spices

  • 1/2 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Liquids

  • 6 cups chicken broth (homemade or low-sodium)
  • Juice of 1 lime (or lemon)

Others

  • 2 tablespoons cooking oil (vegetable or olive oil)

Instructions

  1. Prepare the Ingredients: Peel and dice the potatoes into bite-sized pieces. Chop the onion, mince the garlic, and slice the carrots into rounds. If using bone-in chicken, trim any excess fat for a cleaner taste.
  2. Sauté Aromatics: Heat a large pot over medium heat and add a splash of oil. Sauté the onions and garlic until translucent and fragrant, about 3-5 minutes, unlocking their natural sweetness to lay the flavor foundation.
  3. Brown the Chicken: Add the chicken pieces to the pot and cook until lightly golden on all sides, sealing in the juices to enhance color and richness.
  4. Add Broth and Vegetables: Pour in the chicken broth and bring to a gentle boil. Add the diced potatoes, carrots, corn, ground cumin, paprika, salt, and pepper. Reduce heat to a simmer and cook for 25-30 minutes until potatoes are tender and chicken is fully cooked.
  5. Finish with Fresh Herbs and Citrus: Stir in freshly chopped cilantro and squeeze in lime juice just before serving to brighten the flavors and add a signature Colombian punch.

Notes

  • Use bone-in chicken for a richer broth and deeper flavor.
  • Gently stir potatoes after adding to keep them intact and creamy.
  • Maintain a gentle simmer instead of a boil for tender chicken and perfectly cooked vegetables.
  • Add cilantro right before serving to preserve its fresh herbaceous flavor.
  • Adjust spice levels by modifying cumin and paprika quantities to your taste.
