  • 1 cup heavy cream

  • 2 tsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp salt, or to taste
  • 1/2 tsp freshly ground black pepper, or to taste
  • 1/4 tsp paprika (smoked, optional)

Instructions

  1. Prepare Your Ingredients: Finely chop onions, celery, and carrots. Mince garlic and ensure fresh crab meat is free of shells and ready to use.
  2. Sauté Aromatics: Melt butter in a large pot over medium heat. Add onions, celery, carrots, and garlic. Cook gently for 6 to 8 minutes until soft and fragrant, stirring occasionally to avoid browning.
  3. Make the Roux: Sprinkle flour over the vegetables and stir constantly for about 2 minutes to cook out the raw flour taste and create a smooth thickening base.
  4. Deglaze with Wine: Pour in the dry white wine, stir well, scraping any browned bits off the bottom to add acidity and depth to the soup.
  5. Add Stock and Herbs: Slowly whisk in the seafood or chicken stock. Toss in fresh thyme and parsley. Simmer gently for 15 minutes to meld flavors.
  6. Incorporate Crab and Cream: Fold in the crab meat carefully. Pour in the heavy cream last and warm the bisque gently without boiling to preserve delicate flavors.
  7. Season and Serve: Taste and adjust salt, pepper, and add a dash of paprika for subtle smokiness. Ladle the bisque into bowls and garnish with fresh parsley or a swirl of cream as desired.
