Ingredients

Scale

Banana Bread

  • 34 ripe bananas, mashed (about 1 1/2 cups)
  • 1 1/2 cups all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 3/4 cup sugar
  • 2 large eggs
  • 1/3 cup melted butter or oil
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Cream Cheese Filling

  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Cream Cheese Filling: In a small bowl, beat softened cream cheese with sugar and vanilla extract until smooth and creamy. Set aside.
  2. Mash the Bananas: Use a fork to mash ripe bananas until mostly smooth, leaving a few chunks for texture and moisture.
  3. Mix Wet and Dry Ingredients: In one bowl, blend the eggs, melted butter (or oil), and vanilla extract. In another bowl, whisk the flour, baking soda, salt, and sugar. Gradually add the dry ingredients into the wet mixture, then gently fold in the mashed bananas.
  4. Pour Batter Into Loaf Pan: Lightly grease a loaf pan. Pour half of the banana bread batter into the pan and smooth it evenly.
  5. Add the Cream Cheese Filling: Carefully spread the cream cheese mixture over the batter layer, avoiding edges to prevent leakage.
  6. Top with Remaining Batter: Gently pour and spread the remaining banana bread batter over the cream cheese layer, sealing the filling inside.
  7. Bake and Cool: Bake at 350°F (175°C) for 55-60 minutes or until a toothpick inserted near the edges comes out mostly clean with a few moist crumbs. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use overripe bananas with brown spots for maximum sweetness and moisture.
  • Do not overmix the batter to keep the bread tender; fold ingredients gently.
  • Use room temperature cream cheese, eggs, and butter for even mixing.
  • Spread cream cheese filling away from edges and seal with batter to prevent leaks during baking.
  • Check doneness by inserting a toothpick near the loaf edges, avoiding the cream cheese layer.
