Ingredients

Scale

Main Ingredients

  • 1 lb fresh mushrooms (button, cremini, or shiitake), sliced
  • 2 tbsp butter or oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour (or cornstarch/gluten-free flour for gluten-free)
  • 4 cups vegetable or chicken broth
  • 1 ½ cups milk or cream (or plant-based milk for vegan/low-fat)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Sauté the mushrooms and aromatics: Melt butter or heat oil in a pot over medium heat. Add finely chopped onions and garlic, cooking until fragrant and translucent. Add sliced mushrooms and sauté until they release their moisture and turn golden brown, developing deep, earthy flavors.
  2. Add the flour for thickening: Sprinkle the flour over the mushroom mixture and stir continuously for about 2 minutes to cook out the raw flour taste and start thickening the soup base.
  3. Pour in the broth and milk: Gradually whisk in the vegetable or chicken broth followed by the milk or cream. Stir continuously to keep the soup smooth. Bring to a gentle simmer to thicken and blend the flavors.
  4. Season and blend if desired: Add salt, pepper, and optional fresh herbs like thyme, rosemary, or parsley. For a silky smooth texture, use an immersion blender or blend half the soup then stir back to keep some texture.
  5. Final simmer and serve: Let the soup simmer for 5 to 10 minutes to deepen flavors and reach perfect creaminess. Adjust seasoning before serving your comforting bowl of Cream of Mushroom Soup.

Notes

  • Choose fresh mushrooms for the best earthy flavor and texture.
  • Allow mushrooms to brown well to unlock rich umami flavors.
  • Use full-fat dairy like whole milk, half-and-half, or cream for extra creaminess.
  • Whisk continuously while adding broth and milk to avoid lumps.
  • Adjust flour and liquid amounts to customize soup thickness.
  • For vegan versions, replace butter with olive oil and use coconut or almond milk.
  • Store leftover soup in an airtight container in the refrigerator for up to 3 days.
  • Freeze soup without added cream for up to 2 months; add cream after reheating.
  • Reheat gently over low heat, thinning with broth or milk if too thick.
