Instructions

  1. Prepare and Blacken the Shrimp: Pat the shrimp dry and coat evenly with blackened seasoning. Heat butter and olive oil in a skillet over medium-high heat, then sear the shrimp for 1-2 minutes per side until nicely charred. Remove shrimp and set aside.
  2. Sauté Onions, Garlic, and Mushrooms: In the same skillet, add diced onions and cook until translucent. Stir in garlic and sliced mushrooms, cooking until mushrooms soften and release their juices.
  3. Create the Creamy Sauce: Pour in chicken broth to deglaze the pan, scraping up the browned bits for extra flavor. Stir in heavy cream and sour cream, reduce heat to a gentle simmer, and let the sauce thicken while stirring occasionally.
  4. Combine Shrimp and Sauce: Return the blackened shrimp to the skillet and toss gently to coat in the creamy sauce. Cook for another minute or two to heat through and allow flavors to meld.
