Instructions

  1. Prepare the Shrimp: Heat olive oil in a large skillet over medium heat. Season the shrimp with salt, pepper, and a pinch of red pepper flakes. Sauté the shrimp until pink and cooked through, about 2 minutes per side. Remove and set aside.
  2. Sauté Garlic and Sun-Dried Tomatoes: In the same skillet, add more olive oil if needed. Add minced garlic and chopped sun-dried tomatoes. Stir gently until fragrant, about 1 to 2 minutes, being careful not to burn the garlic.
  3. Create the Creamy Sauce: Pour in chicken broth and simmer for 2 minutes to reduce slightly. Add heavy cream and stir, cooking for 3 to 4 minutes until the sauce thickens. Stir in grated Parmesan cheese and Italian herbs. Adjust seasoning with salt and black pepper.
  4. Combine Shrimp and Pasta: Cook pasta according to package instructions until al dente. Drain and add to the skillet with the sauce and shrimp. Toss gently to coat evenly and warm through.
  5. Garnish and Serve: Remove from heat. Sprinkle with fresh parsley and extra Parmesan if desired. Serve immediately while warm and creamy.
