Ingredients

Scale

Main Ingredients

  • 2 salmon fillets (skin removed, fresh or thawed)
  • 1 cup risoni (orzo)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons fresh herbs (dill or parsley), chopped
  • Salt and pepper to taste
  • 1 1/4 cups chicken or vegetable broth

Instructions

  1. Prepare the Salmon: Season the salmon fillets with salt and pepper. In a large skillet, melt butter over medium heat and cook the salmon for 3-4 minutes on each side until just cooked through and flakes easily. Remove from the pan and keep warm.
  2. Cook the Risoni: In the same skillet, add a little more butter if needed. Add the risoni and toast lightly for 1-2 minutes to enhance flavor. Pour in the chicken or vegetable broth and simmer until the risoni is tender but still slightly firm, absorbing most of the liquid.
  3. Build the Creamy Sauce: Add minced garlic to the risoni and sauté until fragrant. Stir in the heavy cream, lemon zest, and lemon juice. Let the sauce simmer gently until it thickens and coats the pasta.
  4. Combine Salmon and Cheese: Flake the cooked salmon into bite-sized pieces and return it to the skillet. Add freshly grated Parmesan and chopped herbs. Fold everything gently to keep the salmon intact. Adjust seasoning with salt and pepper to taste.
  5. Serve Warm: Once well combined and the sauce is luscious, serve immediately for the best creamy texture and fresh flavors.

Notes

  • Use fresh salmon for best flavor and fluffy texture.
  • Do not overcook the salmon; it should flake easily but remain moist.
  • Toast the risoni lightly to add nutty depth to the dish.
  • Adjust the amount of cream based on desired sauce thickness.
  • Add fresh herbs at the end for maximum aroma and vibrant color.
