Ingredients

Scale

Salmon and Seasoning

  • 4 fresh salmon fillets (6 oz each), wild-caught or farmed
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil

Sauce Ingredients

  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup fresh spinach leaves
  • 1 cup heavy cream or half-and-half
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry and season both sides with salt and pepper. Heat olive oil in a pan over medium-high heat and sear the salmon for about 4 minutes on each side until golden and cooked through. Remove the salmon from the pan gently and set aside.
  2. Sauté the Aromatics: Lower the pan heat to medium and add the minced garlic. Sauté for 1 minute until fragrant, being careful not to burn it. Add the sun-dried tomatoes and stir to combine, allowing their sweet tanginess to release.
  3. Build the Creamy Sauce: Pour in the heavy cream and bring to a gentle simmer while stirring continuously. Add the freshly grated Parmesan cheese and mix thoroughly until the sauce thickens slightly and becomes smooth.
  4. Add Greens and Herbs: Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Add the chopped basil or parsley for a fresh aroma and vibrant color. Season the sauce with salt and pepper to taste.
  5. Combine and Serve: Return the salmon fillets to the pan, spooning the creamy sauce over each piece. Let everything warm through together for 2 more minutes before removing from heat and plating the dish for serving.

Notes

  • Choose fresh salmon for the best texture and flavor.
  • Do not overcook the salmon; keep it slightly pink inside for tenderness.
  • Use high-quality, oil-packed sun-dried tomatoes to enhance richness and authenticity.
  • Add cream gradually while stirring to prevent curdling and achieve a smooth sauce.
  • Allow the sauce to reduce enough to reach a creamy consistency that clings to the salmon.
