Instructions

Slowly combine the wet ingredients into the dry, whisking continuously until smooth and lump-free. Let the batter rest for at least 15 minutes to allow the flour to fully hydrate.
  2. Heat the Pan: Preheat a non-stick skillet or crepe pan over medium heat. Lightly grease it with butter or oil, wiping away any excess to keep the crepes thin.
  3. Cook Each Crepe: Pour about 1/4 cup of batter into the pan, tilting and swirling quickly to coat the surface evenly with a thin layer. Cook for 1 to 2 minutes until edges lift and the bottom is lightly golden. Flip carefully with a spatula and cook the other side for 30 seconds to 1 minute.
  4. Stack and Serve: Transfer the cooked crepe to a plate, then repeat with remaining batter, stacking crepes to maintain warmth and moisture. Serve immediately with your favorite fillings or toppings.
