Instructions

  1. Prepare the Zucchini: Grate the zucchini and place it inside a clean kitchen towel or cheesecloth. Squeeze firmly to remove as much liquid as possible. This step is vital to prevent soggy fritters and ensure a crispy texture.
  2. Mash the Chickpeas: In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky, providing texture to the fritters.
  3. Combine Ingredients: Add the drained grated zucchini, chickpea flour, minced garlic, chopped onion, fresh herbs, lemon juice, cumin, paprika, black pepper, and salt to the mashed chickpeas.   4. Form the Fritters: Using your hands or a spoon, scoop the mixture and gently shape into small patties about 2-3 inches wide. Press them firmly so they hold their shape during cooking.
