Sushi Rice Base
- 2 cups sushi rice (short-grain rice)
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Vegetable oil, for frying
Sushi Toppings
- 4 oz fresh tuna or salmon, sliced thin (or tofu for vegetarian)
- 1 avocado, sliced
- Soy sauce or tamari, to taste
- Spicy mayo or sriracha, for drizzling
Garnishes
- 2 scallions, finely chopped
- 1 tablespoon toasted sesame seeds
- Optional: jalapeño slices, pickled ginger, tobiko, crispy fried onions
- Cook and cool the sushi rice: Rinse 2 cups of sushi rice until water runs clear, then cook according to package instructions. Once tender and sticky, season with a mixture of 3 tablespoons rice vinegar, 1 tablespoon sugar, and 1 teaspoon salt. Spread the rice out to cool completely.
- Form rice squares: With wet hands or using a mold, press the cooled sushi rice firmly into compact 1-2 inch squares that will hold their shape during frying.
- Fry the rice squares: Heat vegetable oil in a pan over medium heat. Fry the rice squares until golden brown and crispy on both sides, about 3-4 minutes per side. Drain on paper towels to remove excess oil.
- Prepare sushi toppings: Slice fresh fish or your choice of protein (tuna, salmon, or tofu) and avocado. Finely chop scallions and prepare any additional garnishes you want to use.
- Assemble the bites: Place a slice of protein and avocado on each crispy rice square. Drizzle with spicy mayo or soy sauce/tamari and sprinkle with scallions and toasted sesame seeds. Add optional garnishes like jalapeño slices for heat or tobiko for extra flavor.
Notes
- Ensure sushi rice is sticky but not mushy to maintain sturdy squares.
- Fry at medium heat to get golden, crispy results without burning.
- Press rice firmly for best shape retention during cooking.
- Serve immediately for optimal crunch.
- Use fresh, sushi-grade fish and store properly for safety.
