Sushi Rice Base

  • 3 tablespoons rice vinegar

  • 1 teaspoon salt

  • 4 oz fresh tuna or salmon, sliced thin (or tofu for vegetarian)
  • 1 avocado, sliced
  • Soy sauce or tamari, to taste
  • Spicy mayo or sriracha, for drizzling

Garnishes

  • 2 scallions, finely chopped
  • 1 tablespoon toasted sesame seeds
  • Optional: jalapeño slices, pickled ginger, tobiko, crispy fried onions

Instructions

  1. Cook and cool the sushi rice: Rinse 2 cups of sushi rice until water runs clear, then cook according to package instructions. Once tender and sticky, season with a mixture of 3 tablespoons rice vinegar, 1 tablespoon sugar, and 1 teaspoon salt. Spread the rice out to cool completely.
  2. Form rice squares: With wet hands or using a mold, press the cooled sushi rice firmly into compact 1-2 inch squares that will hold their shape during frying.
  3. Fry the rice squares: Heat vegetable oil in a pan over medium heat. Fry the rice squares until golden brown and crispy on both sides, about 3-4 minutes per side. Drain on paper towels to remove excess oil.
  4. Prepare sushi toppings: Slice fresh fish or your choice of protein (tuna, salmon, or tofu) and avocado. Finely chop scallions and prepare any additional garnishes you want to use.
  5. Assemble the bites: Place a slice of protein and avocado on each crispy rice square. Drizzle with spicy mayo or soy sauce/tamari and sprinkle with scallions and toasted sesame seeds. Add optional garnishes like jalapeño slices for heat or tobiko for extra flavor.
