Dill Pickle Pasta Salad

Dill Pickle Pasta Salad is a refreshing and tangy summer dish combining tender pasta, crunchy chopped dill pickles, and a creamy, flavorful dressing. Perfect for BBQs, picnics, or as a versatile side, it offers a unique balance of zest, creaminess, and texture with simple ingredients that come together quickly and transform after chilling.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni or rotini pasta

Pickles & Vegetables

  • 1 cup chopped dill pickles
  • 1/4 cup finely chopped red or green onions
  • Optional: diced celery or bell peppers for extra crunch

Dressing

  • 1/2 cup mayonnaise (or plant-based alternative for vegan version)
  • 1 tablespoon mustard
  • Salt, to taste
  • Black pepper, to taste

Cheese & Herbs

  • 1/2 cup shredded cheddar cheese or sharp cheese (vegan cheese optional)
  • 2 tablespoons fresh dill or parsley, chopped

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook your chosen pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta for salad preparation.
  2. Prepare the Dressing: In a mixing bowl, combine mayonnaise, mustard, salt, and pepper. Whisk until smooth and creamy, adjusting seasoning as needed to balance tanginess and creaminess.
  3. Chop the Pickles and Vegetables: Chop the dill pickles into bite-sized pieces, and finely dice onions or any crunchy vegetables you’ve chosen to add. Use fresh herbs like dill or parsley for a burst of color and aroma.
  4. Mix Everything Together: In a large bowl, combine cooled pasta, chopped pickles, onions, cheese, and freshly chopped herbs. Pour the dressing over the salad and gently toss until every piece is coated evenly.
  5. Chill and Serve: Cover the salad and refrigerate for at least 1 hour to allow flavors to meld. Serve cold for the best refreshing taste and crunch.

Notes

  • Use High-Quality Pickles: Choose your favorite or homemade dill pickles for the best flavor.
  • Don’t Overcook Pasta: Keep pasta al dente to maintain texture and avoid mushiness.
  • Chill Well: Refrigerate for at least 1 hour (preferably longer) to enhance flavors.
  • Adjust Acidity: Add a splash of pickle juice or squeeze of lemon if more tang is desired.
  • Add Fresh Herbs Last: Stir herbs in right before serving to keep them vibrant.
