Ingredients

Scale

Pastry

  • Store-bought puff pastry sheets (amount depending on number of rolls)

Sausage Filling

  • Ground breakfast sausage (approx. 250-300g)
  • 1 small onion, finely chopped (optional)
  • Garlic powder or 1 clove fresh garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Mustard or Worcestershire sauce (optional, 1 tsp)

Other

  • 1 egg, beaten (for binding and brushing)

Instructions

  1. Prepare the Filling: In a bowl, combine the ground breakfast sausage with finely chopped onions, garlic powder or minced fresh garlic, salt, pepper, and optional mustard or Worcestershire sauce if desired. Mix thoroughly until fully incorporated for consistent flavor.
  2. Roll Out the Puff Pastry: On a lightly floured surface, unroll the puff pastry sheets. Cut each sheet into even rectangles large enough to hold a spoonful of filling and to wrap around it comfortably.
  3. Assemble the Sausage Rolls: Place a portion of the sausage mixture along one edge of each pastry rectangle. Brush the opposite edge with beaten egg to act as a sealant. Carefully roll the pastry over the filling to enclose it completely, pressing the edges firmly to seal.
  4. Brush and Score: Brush the tops of the rolls with more beaten egg to achieve a shiny, golden crust. Using a sharp knife, make small diagonal slits on top of each roll to allow steam to escape during baking.
  5. Bake to Perfection: Arrange the sausage rolls on a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C (400°F) for 20-25 minutes or until the pastry is puffed and golden brown and the sausage filling is cooked through (internal temperature of 75°C /165°F).

Notes

  • Keep puff pastry chilled until ready to use to prevent it from becoming sticky and difficult to handle.
  • Do not overfill the pastry to avoid bursting during baking.
  • Cut pastry into consistent sizes to ensure even cooking and a professional appearance.
  • Use a baking thermometer to check that the sausage reaches an internal temperature of 75°C (165°F) for safety.
  • Allow sausage rolls to cool slightly after baking to let the filling set and prevent burns while eating.
