Main Ingredients

  • 2 cups cooked shredded rotisserie chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 2 green onions, chopped

Optional Ingredients

  • Ranch or blue cheese dressing for dipping or drizzling
  • Diced jalapeños or hot sauce for extra heat
  • Roasted cauliflower or jackfruit for vegetarian alternative
  • Pepper jack or mozzarella cheese for different cheese blend
  • Gluten-free tortillas as a substitute for flour tortillas
  • Finely chopped celery for added crunch

Instructions

  1. Prepare the Filling: In a medium bowl, mix the shredded chicken with buffalo sauce and softened cream cheese. Stir until the mixture is creamy and evenly coated with sauce.
  2. Add Cheese and Onions: Fold in shredded cheddar cheese and chopped green onions to add gooey texture and freshness to the filling.
  3. Assemble the Roll-Ups: Lay out a tortilla flat, spoon a generous amount of the filling onto one side, then tightly roll it up into a log shape.
  4. Bake Until Melted: Place roll-ups seam side down on a baking sheet and bake at 375°F (190°C) for 12-15 minutes until cheese is melted and tortillas are lightly golden.
  5. Serve Warm: Remove from oven and let cool for a couple of minutes. Slice into bite-sized pieces for easy snacking and serve with optional dips if desired.

Notes

  • Use pre-cooked rotisserie chicken for juiciness and time-saving.
  • Don’t overfill tortillas to prevent tearing.
  • Use a sharp knife to slice roll-ups neatly without squishing.
  • Experiment with spices like garlic powder or smoked paprika for extra flavor.
  • Serve with ranch or blue cheese dressing for a cooling contrast.
  • Leftover roll-ups can be refrigerated up to 3 days in an airtight container.
  • Unbaked roll-ups can be frozen for up to 2 months, wrapped individually in plastic wrap and sealed in a freezer-safe bag.
  • Reheat refrigerated roll-ups in the oven at 350°F (175°C) for about 10 minutes for best texture; avoid microwaving.
