Ingredients

Scale

Yogurt Base

  • 2 cups Greek yogurt (full-fat or low-fat)
  • 12 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Fresh Berries

  • 1 cup mixed fresh berries (such as strawberries, blueberries, raspberries, blackberries)

Optional Toppings

  • 1/4 cup chopped nuts or seeds (almonds, walnuts, chia seeds)
  • Optional add-ins: cacao nibs, mini dark chocolate chips, almond or peanut butter for swirling, finely chopped fresh mint or basil

Instructions

  1. Prepare the Yogurt Base: In a medium bowl, mix Greek yogurt with honey or maple syrup and vanilla extract. Stir thoroughly until the mixture is smooth and evenly sweetened.
  2. Line Your Baking Sheet: Place a sheet of parchment paper on a baking tray to prevent sticking. Spread the yogurt mixture evenly over the parchment to about a quarter-inch thickness using an offset spatula or the back of a spoon.
  3. Add the Berries and Toppings: Scatter your choice of fresh berries evenly over the yogurt base. If using nuts, seeds, or other toppings, sprinkle them on top now to add texture and flavor.
  4. Freeze the Bark: Transfer the baking tray to the freezer and allow the yogurt bark to freeze completely for 3-4 hours or preferably overnight for best results.
  5. Break Into Pieces and Serve: Once fully frozen, remove the tray from the freezer, peel off the parchment paper, and break or cut the bark into bite-sized pieces. Serve immediately or store in an airtight container in the freezer for later snacking.

Notes

  • Spread the yogurt evenly to ensure uniform freezing and easy breaking.
  • Pat berries dry before adding to prevent excess moisture and icy spots.
  • Don’t overload with toppings to avoid uneven freezing and difficult breaking.
  • Mix different types of berries for varied flavors and appealing colors.
  • Use Greek yogurt for the best texture and protein content.
  • Store leftovers in an airtight container or zip-lock bag in the freezer for up to 2 weeks.
  • Let bark sit at room temperature for a few minutes if too hard to bite.
