Ingredients

Scale

Main Ingredients

  • 1 lb fresh carrots (thick and sturdy preferred)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Optional Ingredients

  • 1 tbsp fresh parsley or thyme, chopped
  • 1 tsp lemon juice or zest
  • Chili flakes or cayenne pepper (for spicy kick)
  • 1 tbsp honey or maple syrup (for sweet and savory variation)
  • 2 tbsp toasted nuts or seeds (almonds, pumpkin seeds, etc.)
  • Alternative herbs: rosemary, dill, basil
  • Plant-based butter (to replace olive oil for vegan butter swap)

Instructions

  1. Prepare and Cook the Carrots: Wash the carrots thoroughly and peel if desired. Boil or steam the carrots until fork-tender but not mushy, about 10 to 15 minutes depending on thickness.
  2. Smash the Carrots: Transfer the cooked carrots onto a sturdy surface or cutting board. Using the bottom of a glass or a spatula, gently press down on each carrot until slightly flattened but still in one piece, increasing surface area for crisping.
  3. Season and Roast: Preheat oven to 425°F (220°C). Place smashed carrots on a parchment-lined baking sheet. Drizzle with olive oil and season evenly with salt, pepper, and garlic powder. Toss gently to coat. Roast for 20 to 25 minutes until edges are golden and crispy.
  4. Finish with Freshness: Remove from oven, sprinkle fresh herbs over the carrots, and add a squeeze of lemon juice or zest to brighten the flavor. Serve immediately.

Notes

  • Choose thick, sturdy carrots for easier smashing and better texture contrast.
  • Avoid overcooking carrots before roasting to maintain firmness and avoid mushiness.
  • Ensure even coating with oil and seasoning for consistent roasting results.
  • Roast at high temperature for crispy edges and deep caramelization.
  • Add fresh herbs after roasting to keep flavors vibrant.
  • Reheat leftovers in a hot oven or toaster oven to retain crispiness; avoid microwaving.
  • Store leftovers in an airtight container in the fridge for up to 3 days; flavors improve but texture softens.
  • Freeze blanched carrots before smashing for up to 2 months.
