Instructions

  2. Sweeten and Flavor the Puree: Mix the strawberry puree with 2 tablespoons of sugar, 1 teaspoon of lemon juice, and 1 teaspoon of vanilla extract. Stir gently to combine, then set aside to let the flavors meld.
  3. Whip the Cream: In a chilled bowl, whip 1 cup of heavy cream until it forms soft peaks. Be careful not to overwhip, as you want the cream to remain light and airy.
  4. Incorporate Gelatin (Optional): If you prefer a firmer mousse, dissolve 1 teaspoon of gelatin in 2 tablespoons of warm water, then fold it gently into the strawberry mixture before combining with the whipped cream.
  5. Fold the Mixtures Together: Gently fold the strawberry puree into the whipped cream using a spatula. Use slow, wide strokes to keep the mousse fluffy and avoid deflating the cream.
  6. Chill the Mousse: Transfer the mousse into serving glasses or bowls and refrigerate for at least 2 hours to allow the flavors to deepen and the mousse to set.
