Ingredients

Ingredients

  • Fresh mushrooms (button or cremini) – 12 oz
  • All-purpose flour – 1 cup (or gluten-free flour alternative)
  • Eggs – 2 large
  • Breadcrumbs (plain or seasoned) – 1 cup (or gluten-free breadcrumbs)
  • Salt – 1 tsp, plus extra to season flour and coating
  • Black pepper – 1/2 tsp, plus extra to season flour and coating
  • Garlic powder – 1 tsp
  • Paprika – 1 tsp
  • Vegetable oil (neutral, high smoke point) – for frying, about 2-3 cups

Instructions

  1. Prepare the Mushrooms: Gently wipe the mushrooms clean with a damp paper towel without soaking them. Trim stems if needed and pat dry completely to ensure crispiness.
  2. Set Up Your Breading Station: In three separate bowls, place the all-purpose flour lightly seasoned with salt and pepper in the first, whisk the eggs until smooth in the second, and combine breadcrumbs with garlic powder, paprika, salt, and pepper in the third.
  3. Coat the Mushrooms: Dip each mushroom into the seasoned flour first, shaking off excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to ensure the coating sticks well.
  4. Fry to Perfection: Heat vegetable oil in a deep pan to 350°F (175°C), enough to cover half the mushrooms. Fry mushrooms in batches without overcrowding for 3-4 minutes or until golden brown and crisp. Drain on paper towels.
  5. Serve Hot: Serve immediately for best crunch with your favorite dipping sauces or garnishes.

Notes

  • Use dry mushrooms: Pat mushrooms thoroughly dry before breading to avoid sogginess.
  • Maintain oil temperature: Keep oil between 350-360°F for even cooking and crispiness.
  • Don’t overcrowd the pan: Fry in small batches to maintain oil temperature and achieve perfect crispiness.
  • Use fresh breadcrumbs: Freshly ground breadcrumbs produce better texture than store-bought panko.
  • Rest before frying: Let breaded mushrooms rest for a minute to help the coating adhere better.
