Ingredients

Scale

Protein

  • 46 Chicken Thighs, skin-on, bone-in

Vegetables

  • 1.5 pounds Baby Potatoes, rinsed and halved if large

Fat & Oils

  • 23 tablespoons Butter
  • 2 tablespoons Olive Oil

Seasonings & Flavorings

  • 45 Garlic Cloves, minced
  • 12 tablespoons Fresh Lemon Juice
  • Salt, to taste
  • Black Pepper, to taste
  • 2 tablespoons Fresh Herbs (parsley or thyme), chopped

Instructions

  1. Prepare the Ingredients: Rinse the baby potatoes and cut any larger ones in half to ensure even cooking. Pat the chicken thighs dry with paper towels for crispier skin. Mince the garlic and chop the fresh herbs.
  2. Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down and cook until the skin is golden and crisp, about 6-8 minutes. Flip and cook the other side for 2-3 minutes, then remove chicken from the pan and set aside.
  3. Cook the Potatoes: Add the baby potatoes to the same skillet and toss to coat with the chicken drippings. Season with salt and pepper. Cook, stirring occasionally, until potatoes begin to soften and brown slightly, about 8-10 minutes.
  4. Make the Garlic Butter Sauce: Add the butter and minced garlic to the skillet with the potatoes. Stir gently to melt butter and infuse the potatoes with garlic, cooking just until garlic is fragrant to avoid burning.
  5. Return Chicken and Finish Cooking: Place the chicken thighs back onto the skillet on top of the potatoes. Reduce heat to medium-low, cover the pan, and cook for an additional 10-15 minutes until the chicken is cooked through and potatoes are tender.
  6. Add Fresh Herbs and Lemon: Remove the lid, squeeze fresh lemon juice over the dish, and sprinkle with chopped herbs. Toss gently to combine and serve immediately for best flavor and texture.

Notes

  • Pat dry chicken before cooking to maximize skin crispiness.
  • Use medium heat to brown chicken and potatoes without burning.
  • Avoid overcrowding the pan to ensure even cooking and crisp edges on the potatoes.
  • Use fresh garlic cloves instead of powder for vibrant flavor.
  • Allow chicken to rest a few minutes after cooking to retain juices.
