Ingredients

Scale

Steak Bites

  • 1 lb sirloin, ribeye, or favorite steak cut, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste

Potatoes

  • 1 lb baby potatoes (gold or red), washed and halved
  • 2 tbsp olive oil (for roasting)
  • Salt, to taste
  • Black pepper, to taste

Garlic Butter Sauce

  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley or thyme, chopped
  • 1 tbsp olive oil (for searing steak)

Instructions

  1. Prepare the Potatoes: Wash and halve the baby potatoes, then toss with olive oil, salt, and pepper. Spread them on a baking sheet and roast in a preheated oven at 425°F (220°C) for about 20 minutes or until crispy and golden.
  2. Cut and Season the Steak: While the potatoes roast, cut the steak into bite-sized pieces. Season generously with salt and black pepper to enhance the natural flavors before searing.
  3. Sear the Steak Bites: Heat a large skillet over medium-high heat and add olive oil. In a single layer, add the steak bites without overcrowding and sear each side for 2-3 minutes until browned but still juicy inside. Remove from skillet and set aside.
  4. Make the Garlic Butter Sauce: Lower the skillet heat to medium and add butter. Once melted, stir in minced garlic and fresh herbs. Cook gently until garlic is fragrant but not browned, creating a rich and aromatic sauce.
  5. Combine Everything: Return the roasted potatoes and steak bites into the skillet. Toss well to coat all pieces evenly with the garlic butter sauce. Cook together for an additional 1-2 minutes to meld the flavors.
  6. Serve Warm and Enjoy: Transfer to a serving plate, garnish with extra fresh herbs if desired, and serve immediately for a delicious, comforting meal.

Notes

  • Let steak bites come to room temperature for 15-20 minutes before cooking to ensure even searing.
  • Do not overcrowd the pan when searing to achieve a good crust; cook in batches if necessary.
  • Use fresh minced garlic rather than powdered for the best flavor.
  • A cast iron skillet is ideal for retaining heat and achieving a perfect steak crust.
  • Allow steak bites to rest a few minutes off heat before serving so juices redistribute.
