Ingredients

Scale

Potatoes

  • 2 pounds Yukon Gold or red potatoes, washed and cut into 1 to 1.5-inch pieces

Seasoning and Flavor

  • 34 fresh garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Prepare the Potatoes: Start by washing and scrubbing your potatoes thoroughly. Cut them into even-sized pieces (about 1 to 1.5 inches) to ensure they cook evenly. Leaving the skin on will add texture and nutrients.
  2. Toss with Oil, Garlic, and Herbs: In a large bowl, combine olive oil with minced garlic, rosemary, thyme, and parsley. Add the potatoes and toss well to coat each piece thoroughly with the flavorful mixture.
  3. Season and Arrange: Season the potatoes generously with salt and pepper. Spread them out on a baking sheet in a single layer to allow for even roasting and to maximize crispiness.
  4. Roast to Perfection: Place the tray in a preheated oven at 425°F (220°C) and roast for 30-40 minutes, flipping halfway through. The potatoes should turn golden brown and crispy on the outside while remaining tender inside.
  5. Finish and Serve: Once done, remove from the oven and optionally sprinkle with fresh parsley or lemon zest for an extra pop of freshness. Serve warm and enjoy every crunchy, garlicky bite.

Notes

  • Cut potatoes into similar sizes for even cooking and consistent texture.
  • Roast at high heat (425°F / 220°C) to achieve a crisp exterior without drying out the inside.
  • Spread potatoes in a single layer with space between pieces to promote browning and crispiness.
  • Add tender fresh herbs like parsley after roasting to preserve color and flavor.
  • Use a heavy, sturdy baking sheet to distribute heat evenly and prevent sticking.
  • Reheat leftovers in a hot pan with olive oil or under the broiler to restore crispiness; avoid microwaving.
