Scale

Cake Ingredients

  • 2 1/4 cups all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (or coconut oil for vegan version)
  • 1/2 cup packed brown sugar
  • 1 large egg (or vegan egg substitute)
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Filling Ingredients

  • 4 oz cream cheese, softened (or vegan cream cheese alternative)
  • 1/4 cup unsalted butter, softened (or coconut oil for vegan version)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the flour, baking soda, ground ginger, cinnamon, and salt. In a separate bowl, cream the softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add molasses and vanilla extract. Gradually add the dry ingredients to the wet, mixing just until combined to keep the batter tender.
  2. Bake the Cake Rounds: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. Using a small ice cream scoop or spoon, drop dollops of batter onto the sheets, spacing them evenly. Bake for 10-12 minutes, until edges are set and tops spring back when lightly touched. Transfer to wire racks and cool completely.
  3. Make the Filling: While the cakes are cooling, beat together cream cheese and butter until smooth and creamy. Gradually add powdered sugar and vanilla extract, beating until light and fluffy. Gently fold in mini marshmallows to add a fluffy texture that complements the spicy cakes.
  4. Assemble the Whoopie Pies: Spread a generous dollop of filling on the flat side of one cake round. Top with another round, pressing gently to spread the filling evenly. Repeat with remaining rounds.

Notes

  • Measure ingredients carefully to ensure the perfect texture and flavor.
  • Avoid overmixing the batter to keep the whoopie pies tender and fluffy.
  • Allow cake rounds to cool completely before filling, preventing melting and mess.
  • Keep the filling chilled for easier spreading and firmer whoopie pies.
  • Use fresh ground spices for the best aroma and taste.
