  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil and cook the tortellini according to package instructions, usually about 3-5 minutes for fresh pasta. Drain and rinse under cold water to stop cooking and cool down the pasta.
  2. Prepare the Vegetables and Cheese: While the tortellini cooks, halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, crumble the feta cheese, and pit and slice the Kalamata olives if needed.
  3. Mix the Dressing: In a small bowl or jar, whisk together olive oil, fresh lemon juice, minced garlic, salt, and pepper to create a zesty, well-balanced dressing.
  4. Combine Ingredients: In a large mixing bowl, combine the cooled tortellini, tomatoes, cucumbers, olives, onions, feta, and chopped fresh herbs. Pour the dressing over the salad and toss gently to coat everything evenly.
