Grilled Cheese with Spinach and Ricotta

Grilled Cheese with Spinach and Ricotta is a comforting and nutritious sandwich that combines creamy ricotta cheese and sautéed spinach between buttery toasted bread. Easy to prepare and perfect for any time of day, this recipe offers a fresh twist on the classic grilled cheese by adding vibrant greens and rich flavors while remaining customizable and suitable for all ages.

Ingredients

Scale

Bread

  • 4 slices sturdy bread (sourdough, whole wheat, or artisan white bread)

Filling

  • 1 cup fresh ricotta cheese
  • 2 cups fresh spinach, wilted
  • 1/4 teaspoon salt, plus more to taste
  • 1/8 teaspoon pepper, plus more to taste
  • 1/4 teaspoon garlic powder or 1 small clove fresh garlic, minced (optional)

For Cooking

  • 2 tablespoons butter, softened

Instructions

  1. Prepare the Spinach: Briefly sauté fresh spinach with a pinch of salt and optional garlic powder or minced fresh garlic in a pan until wilted but still bright green. Let it cool slightly to prevent sogginess in the sandwich.
  2. Assemble the Filling: In a bowl, gently combine the ricotta cheese with the sautéed spinach. Season the mixture with salt and pepper to taste, mixing carefully to keep the spinach evenly distributed.
  3. Butter the Bread: Spread a thin, even layer of softened butter on one side of each bread slice to ensure a golden, crispy crust when cooked.
  4. Build the Sandwich: Place the ricotta-spinach mixture evenly on the unbuttered side of one bread slice. Top with the second slice of bread, making sure the buttered side is facing outward.
  5. Cook to Perfection: Heat a skillet over medium heat. Cook the sandwich for about 3 to 4 minutes on each side, pressing gently with a spatula to help it hold together, until the bread is crisp and golden brown and the filling is warm and melty.

Notes

  • Use fresh ricotta cheese for the creamiest texture and best flavor.
  • Don’t overload the filling to avoid difficulty flipping and a soggy sandwich interior.
  • Cook over medium heat to evenly crisp the bread without burning.
  • Press gently with a spatula while cooking to keep the sandwich intact.
  • Allow the sandwich to rest a minute or two before cutting to keep the filling in place.
