Instructions

  1. Prepare the Vegetables: Slice the bell peppers, zucchini, eggplant, and red onions into thin, uniform pieces to ensure even cooking on the grill or stovetop grill pan. Lightly toss the slices with olive oil, salt, and pepper to enhance their natural sweetness and develop a beautiful char.
  2. Grill the Vegetables: Place the prepared vegetables over medium-high heat and grill them until tender and slightly charred, about 3–5 minutes per side. Remove once they have achieved the perfect grilled texture and set aside.
  3. Prepare the Bread: Slice your choice of crusty bread in half. Rub the cut sides with a clove of garlic for subtle aromatic flavor, then brush lightly with olive oil. This step helps create a crispy, flavorful crust during grilling.
  4. Assemble the Sandwich: On one half of the bread, layer fresh spinach or arugula first, followed by the grilled vegetables, then generous slices of fresh mozzarella. Sprinkle a dash of salt and pepper over the layers, then top with the other half of the bread.
