Ingredients

Scale

Dough Ingredients

  • 3 ½ cups All-Purpose Flour
  • 2 ¼ tsp Active Dry Yeast (1 packet)
  • ¼ cup Granulated Sugar
  • 1 tsp Salt
  • 1 cup Whole Milk, warmed
  • ⅓ cup Unsalted Butter, softened
  • 2 Large Eggs, room temperature

Filling Ingredients

  • 1 ½ cups Fresh Strawberries, chopped
  • 2 tsp Ground Cinnamon
  • 2 tbsp Granulated Sugar
  • ⅓ cup Unsalted Butter, softened (for spreading)

Glaze Ingredients

  • 4 oz Cream Cheese, softened
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 24 tbsp Whole Milk (adjust for consistency)

Instructions

  1. Prepare the Dough: Warm the milk until pleasantly warm (not hot), then stir in the sugar and active dry yeast. Let it sit for 5-10 minutes until frothy, indicating the yeast is activated. In a large bowl, mix the flour, salt, eggs, and softened butter into the yeast mixture until a soft dough forms. Knead for 8-10 minutes until smooth and elastic. Cover and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Make the Filling: While the dough rises, chop the fresh strawberries and toss them with cinnamon and sugar to enhance their natural sweetness. Set aside to let the flavors meld.
  3. Roll and Fill the Dough: On a floured surface, roll the risen dough into a large rectangle. Spread the softened butter evenly over the dough. Sprinkle the strawberry-cinnamon mixture generously across the buttered surface. Carefully roll the dough into a tight log and slice into equal-sized rolls.
  4. Second Rise and Bake: Place the rolls in a greased baking dish, spacing them apart to allow room for expansion. Cover and let rise for another 30-40 minutes. Preheat the oven to 350°F (175°C) and bake the rolls for 25-30 minutes, or until golden brown on top.
  5. Prepare the Cream Cheese Glaze: While the rolls bake, combine softened cream cheese, powdered sugar, vanilla extract, and milk in a bowl. Whisk until smooth and pourable, adding more milk if needed to achieve desired consistency.
  6. Glaze and Serve: Let the baked rolls cool for 5-10 minutes. Drizzle the cream cheese glaze generously over the warm rolls, allowing it to seep into the crevices for a glossy, creamy finish.

Notes

  • Activate yeast with warm (not hot) milk to avoid killing it.
  • Use a moderate amount of filling to prevent soggy rolls.
  • Fresh strawberries provide the best flavor and texture.
  • Allow rolls to cool briefly before glazing so the glaze doesn’t melt completely.
  • Cover dough during rising to prevent drying out.
  • Ensure eggs and butter are at room temperature for easier mixing and better dough texture.
