  1. Prep the Strawberries: Rinse fresh strawberries thoroughly, remove the stems, and cut into halves or quarters for even blending.
  2. Make the Simple Syrup: In a saucepan over medium heat, combine water and granulated sugar. Stir until sugar fully dissolves. Remove from heat and let cool to room temperature.
  3. Blend Ingredients: In a blender or food processor, combine prepared strawberries, cooled simple syrup, and fresh lemon juice. Blend until smooth and bright pink with no chunks.
  4. Strain the Mixture: Pour the strawberry puree through a fine mesh sieve to remove seeds and pulp, pressing gently with a spatula for a silky smooth texture.
  5. Chill the Mixture: Cover and refrigerate the strawberry mixture for at least 1 hour to chill thoroughly, which helps with even freezing.
  6. Freeze in an Ice Cream Maker: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions (approximately 20-30 minutes) until a soft-serve consistency is reached.
  7. Firm Up the Sorbet: Transfer churned sorbet to an airtight container and freeze for 2-3 hours to achieve a firmer texture suitable for scooping.
